Method:
step 1: Soak the Basil Seeds
Basil seeds, or sabja seeds, are an important part of the faluda texture. Soak them in a bowl of water for about 15-20 minutes until they expand and become gelatinous. These seeds add a delightful chewy texture to the dessert. Once they’re ready, drain the water and set them aside.
Step-2:making faluda sev or noodles
Now we will take a pan and put arrowroot powder in it and add 2 cups of water and mix it well so that there are no lumps left. After that we will place this pan on the gas to cook and keep stirring continuously so that the mixture does not burn. When the mixture becomes very thick then we will turn off the gas flame. Now we will take a sev making machine and put this thick mixture in it and make sev or faluda noodles from it. Keep in mind that put these noodles in chilled water otherwise all of them will stick to each other.
Step-3: making rabdi
First of all we will take a heavy bottom pan, in it we will put milk and boil it on high flame. When the milk is boiled then we will reduce the flame to medium or low and keep stirring it for some time so that the milk does not stick to the bottom otherwise the rabdi will not taste good. When the milk condenses then add cardmom powder for beautiful aroma and when it remains ¼ then we will turn off the gas. And in this way our rabdi will be ready.
Step-4: layering the faluda
Now we will take a glass, first of all we will add rose syrup, then add some tutti-frutti , after that add some rabdi, then add faluda noodles, after that add some sabja seeds, then tutti-frutti on top and then add rose syrup and finally we will add ice cream and add some more tutti-frutti on top and garnish it.
I have done the layering in my own way, you can do the layering in any other way as you like.
