
Today I am going to share one such special potato brinjal recipe with you all which I like very much but my husband does not like it at all because this dish contains brinjal and he does not like brinjal. If I add brinjal in any recipe then he does not eat that dish at all. Well, this is all about my sweet husband, currently we have come here for some other purpose… yes we should turn towards this recipe.
Actually brinjal vegetable is made in many ways like bharwa brinjal (stuffed brinjal), potato brinjal curry etc. But today I will share with you a very simple and yummy recipe which if you eat once, you will make it again and again.
So without wasting any time let us start the recipe.

Ingredients:
- 4-5 medium sized brinjal
- 3 -4 medium sized potatoes
- 2-3 green chillies(chopped)
- 2-dried red chillies
- Salt as per taste
- Oil as per requirement
- Special masala:

- 1tsp cumin seeds
- 1/2tsp black peppercorn
- 1/2 tsp fennel seeds
- 1/2tsp carrom seeds
- 2tsp coriander seeds
- 8-9 cloves of garlic with skin
- 2- dried red chillies

Dry rost all special masala mentioned above and grind them finely in grinder
Method:
Step 1:preparing vegetables
First of all we will finely slice the brinjal and potatoes and wash them. Make sure that when you cut the brinjal, keep cutting it and put it directly in the water, otherwise the brinjal starts turning a bit black. Maybe there is some ingredient found in the brinjal that reacts with the atmosphere and changes its color to a little blackish. So please keep this in mind.

Step2:cooking vegetables
Now we will take a pan and put oil in it enough so that the vegetables can be fried well in it. When the oil becomes hot, we will put dried red chillies in it and fry them till they turn brown. Then we will put our chopped vegetables and green chillies in it and sauté it. After sautéing for some time, we will add salt in it and fry till the vegetables are cooked well.

Step3:adding special masala
When the vegetables are thoroughly cooked, we will add our special masala to it, mix it well and cook it on slow flame for 3-4 minutes. And in this way our potato brinjal sabji will be ready.

Step4:garnish and serve
Now we will garnish it with fresh chopped coriander leaves and serve it. So here, our potato brinjal sabji is ready. Now we can enjoy it with our family members.
