Ingredients:
- – 1 medium size cauliflower (phoolgobhi), chopped into florets
- – 1 cup besan (gram flour)
- – ¼ cup rice flour (for crispy texture)
- – 1 tbsp cornflour (for extra crunch)
- – 1 tsp ginger-garlic paste
- – 8-10 curry leaves (kadi patta), finely chopped
- – ½ tsp turmeric powder (haldi)
- – 1 tsp red chili powder
- – ½ tsp black pepper powder
- – 1 tsp cumin powder (jeera powder)
- – 1 tsp garam masala
- – 1 tbsp chopped garlic
- – 1 tbsp chopped coriander leaves
- – Salt according to taste
- – Water (as per need )
- – Oil (for frying)

Method:
Step -1 :blanching the cauliflower
In this step first of all we will take water in a pot and add 1 teaspoon turmeric and boil it, then after turning off the flame of the gas we will put cauliflower florets in the same hot water and leave it to soak for 3-4 minutes, then strain these florets from the water.
By doing this process, we will have the benefit that thefried cauliflower pakodas will get cooked well from inside and will become crunchy from outside.
Step -2:marination of florets

Now we will take a big size bowl and in it first of all we will put these blanched cauliflower florets, then we will add rice flour, gram flour or besan, cornflour, ginger garlic paste, garam masala powder, red chilli powder, coriander powder, turmeric powder, black pepper powder, cumin powder and chopped fresh coriander leaves and then we will coat all these spices nicely on the cauliflower.lastly add salt in it.
Step -3:adding water
Now we will sprinkle water little by little in this mixture and keep mixing till the masala gets well coated with the cauliflower. If we add more water then the masala will not get well coated with the cauliflower.
Step -4:frying the pakodas
Now we will take a pan, add oil as per requirement, heat the oil well, then add chopped garlic and chopped curry leaves in it, then in it we will add the masala coated cauliflower florets and deep fry it on high flame till it turns brown.
Step 5:serve &enjoy
Now we can serve these fried cauliflower pakodas with coconut chutney or any chutney of your choice.
