Why is Gajar ka halwa so special?
Gajar ka halwa is not just a sweetness, but an emotion. It is a winter favourite of every Indian household. Because:
1. Seasonal taste – The real taste of carrots comes only in the winter season, when red, juicy carrots are available in the market.
2. Pure Ingredients – There is no chemical or any fancy ingredient in it. Just desi ghee, milk, carrots, and the love of dry fruits.
3. Childhood memories – In every household, some or the other memory is associated with this halwa. Halwa made by grandmother or grandmother gives a different kind of peace.

Ingredients:
- Carrots (Gajar ) – 1 kg (take red and sweet ones, so that the halwa tastes naturally)
- Milk – 1 liter (full cream is best)
- Desi Ghee – 4 tbsp (use real ghee for more taste)
- Sugar – 1 cup (you can increase or decrease it according to your taste)
- Mawa (Khoya) – 250 gm (optional, but the taste is strong)
- Cardamom Powder – 1 tsp (a small spoonful of juice)
- Almonds, Cashews, Pistachios – 1/2 cup (cut into small pieces)
- Raisins – 2 tbsp (if you like them)

Method :
Step -1: washing of carrots(Gajar)
First of all we will take red carrots and wash them well with water so that all the dirt gets removed.

Step -2 : grate the carrots (Gajar )
Now we will grate these washed carrots (Gajar) with the help of a grater. It is a little time consuming but if halwa is made in this way then it tastes very good. Actually, nowadays people make halwa without grating it so that time consumption is less but the thing about halwa made after grating carrots is not there in halwa made in any other way.
Step -3 : cooking of carrot(Gajar) in milk
Now we will take a pot and put it on the gas to boil the milk in it. When the milk comes to a boil, put the grated carrot in it to cook on slow flame. We will keep stirring in between so that the carrots do not burn. When all the milk gets absorbed in the carrots, we will turn off the gas flame.

Step -4: adding Khoya and sugar
Now we will take a pan and add ghee in it. Then add 3-4 green cardamoms. When the cardamom is lightly cooked, add carrots cooked in milk and mix it well. Then in the same we will add sugar and Khoya and keep stirring till all the things are mixed well and the consistency of the halwa becomes a little thick.
Step -5: adding dryfruits
Now we will add cardamom powder in it and lightly roast all the dry fruits in ghee and add it. Now mix it well and our carrot halwa is ready.

Step -6 :serve & enjoy
Now we will serve our delicious carrot halwa. If you want, eat it hot or if you like it in cold form, keep it in the fridge for some time and then enjoy.
