Instructions: Step by Step Guide
1. Preparing the Cauliflower (phool gobhi)

First of all, we will cut the cabbage into small pieces, after that we will wash it thoroughly two to three times with water and keeping a little hygiene in mind, we will wash it one more time with lukewarm water so that the germs, insects and dust inside the cabbage will be cleaned and our curry will taste good.
2. Cooking the Vegetables
•Take a pan and put as much oil in it as required. Then in that oil add some cumin seeds and fry it a bit till it crackles. The aroma of cumin seeds gives a different flavour to the curry.
• Now in the same oil we will put finely chopped onion and sauté it till the onion turns brown.
• When the onion turns brown then we will add ginger garlic paste in it and fry it well till the oil separates from the masala.
3 Adding Tomatoes & Spices
Now in this masala we will add chopped tomatoes, turmeric and coriander powder and fry till the masala is well cooked. When the oil starts to separate from the masala then our curry masala will be well prepared and now there will be no raw smell of masala. • Then in this we will add some kasuri methi which will take its taste to the next level.
4. Cooking the Cauliflower ,peas &potatoes
• Now in this cooked masala we will put the chopped cauliflower and sliced potatoes cook for 5 to 7 minutes on low flame till the cauliflower becomes soft and absorbs the spices inside it.
• When the cauliflower becomes soft, add green peas to it and sauté it and cook till the peas and potatoes become soft.
• Now add some garam masala to it and give a good mix and cook for 2-3 minutes.
5. Simmering the Curry
• Now add water to it to make curry. If you want thick gravy then you should add less water. You can see the consistency as per your requirement. Add as much water as you need.
• Let the curry simmer on low flame for 10-15 minutes. This will cook the vegetables properly and the spices will blend well in them.
6. Garnishing & Serving
•When the cauliflower matar curry is ready, you can sprinkle finely chopped coriander and garam masala powder on top of it, which will make the curry even more fragrant and wonderful. If you eat this cauliflower peas dish with roti or rice, you will enjoy it a lot.
