Ingredients:

  • Mutton -½ kg
  • Onion -3 (big size) sliced finely
  • Curd -50g
  • Ginger-Garlic paste -3 tbsp
  • Tomato -3 (big size) chopped
  • Mint leaves -finely chopped
  • Coriender leaves -finely chopped
  • Masoor dal (red lentil )-1 cup
  • Green chillies -4-5
  • Dried red chilli -4-5
  • Kasoori methi -1tsp
  • Garam masala powder -1tsp
  • Turmeric -1tsp
  • Red chilli powder -1tsp
  • Coriender powder -1tbsp
  • Salt -as per requirement
  • Oil -as per requirement
  • Bottle gourd(lauki) -1(medium size) peeled &chopped

Whole spices:

  • Cinnamon stick -3-4
  • Black cardmom -1
  • Black peppercorn -1tsp
  • Clove -6-7
  • Bay leaf -2-3
  • Star anise (chakri fool) -1
  • Cumin seed -1tsp

Preparation Time

  • Active Prep Time: 15 minutes
  • Cooking Time: 1 hour 30 minutes
  • Total Time: 1 hour 45 minutes

Method:

Step-1:preparing mutton gravy

Now we will take a pressure cooker and add mutton, tomatoes, onion, ginger-garlic paste, curd, mint leaves, coriander leaves, add whole spices mentioned above, red chilli, salt, turmeric, coriander powder, red chilli powder. After that we will add 3 tbsp oil and ghee and add ½ cup water as well and mix it well with the help of a spoon. Once it is mixed, we will cover the cooker with a lid and cook it on high flame for 5-6 whistles. When the pressure of the cooker releases on its own, then we will open the cooker and shift our prepared mixture to another pan.

Step-2:Cooking lentil and bottle gourd

Now we will add masoor dal in the same cooker and add 1 cup water and cook till 2 whistles on high flame. When the dal is cooked, we will mash it a little with a spoon. Then in the same we will put bottle gourd and add ½ cup water and cook till 1 whistle on medium to high flame.

Step-3:Mixing mutton gravy and dal mixture

Now we will take a pan, add 2 tbsp oil in it and add sliced ​​onion for tadka. When the onion turns golden brown, we will keep the little amount of  brown onion aside for garnishing . Now in it we will add the prepared mutton gravy and fry it well on high flame for 2-3 minutes. After that we will add cooked dal and bottle gourd mixture and mix it well and fry for 2-3 minutes so that all the things get mixed well. Along with that, we will add green chilies, coriander leaves and garam masala powder and give it a final touch. Add 1 cup water and cook it on high flame for 5-7 minutes till the desired consistency is achieved.

Step-4:Garnish & Serve

Now we will finally garnish our cooked dal gosht with brown onion and green coriander leaves and serve it. We will also add some lemon juice to it which will enhance the taste of dal gosht.
